VEGAS DINING NEWS: Sartiano’s for the Wynn, All-You-Can-Eat Guy Fieri for $20, What’s Going Into Julian Serrano’s Former Aria Space?

Sartiano’s Italian Steakhouse is set to debut this winter at the Wynn. The upscale eatery, founded in New York City by Scott Sartiano in 2023 blends classic Italian cuisine with a contemporary steakhouse experience.

The restaurant is part of Sartiano’s Bond Hospitality group, which operated the 1 OAK nightclub at the Mirage and is scheduled to open the members-only Zero Bond club at the Wynn later this year.

Sartiano’s won’t be located inside the club, but in an adjoining area overlooking the Wynn Golf Club. According to Vital Vegas, the space will likely be the former Country Club restaurant, which closed in 2017.

The second Sartiano’s location will feature a menu led by James Beard Award-winning chef Alfred Portale and executive chef Michael Rubinstein. It will include signature dishes such as Golden Osetra Caviar Cannoli and a 40-ounce Bistecca alla Fiorentina.

In Manhattan, where it’s called Sartiano’s at The Mercer after its host hotel, the eatery has attracted celebrity diners including Kim Kardashian, Paul McCartney, and Margot Robbie.

Cheap Eats Alert!

Guy Fieri’s Flavortown Vegas Sports Kitchen at the Horseshoe is currently offering an all-you-can-eat brunch for $19.99.

The deal runs from 8 am to 2 pm, Monday-Friday, but comes with a 90-minute limit.

For an extra $10, you can add on steak and eggs, and $29.99 on top of that gets you all-you-can-drink margaritas, Bloody Mary’s or mimosas.

London Indian Eatery May Be in the Cards for Aria

The Las Vegas Review-Journal reports that a restaurant called Gymkhana will replace Julian Serrano Tapas at Aria, which shuttered in February after 15 years following the namesake chef’s retirement.

The newspaper notes that permit filings, such as the one it gleaned this information from, frequently cloak the real name of restaurants with pseudonyms to throw pesky journalists off the trail. So this may or may not be the same Gymkhana that serves Indian cuisine in London and has two Michelin stars to show for it.

However, those pseudonyms are usually nonsense names, not the names of actual restaurants, so we say this is a good bet. According to the permit, the restaurant will cost $4 million to build.
