Flamingo Las Vegas is getting a Cuban restaurant. According to Scott Roeben of Casino.org’s own Vital Vegas blog, Havana 1957 will move into the vacated Tropical Breeze Café space across from the resort’s vacated buffet space.

Havana 1957 is a chain with five locations in South Florida, home to 1.2 million Cuban Americans. According to its website, the eateries create “a unique dining experience that allows you to spend Un Dia En La Habana and relive the glory and glamour of old Cuba during the 1950s.”

The restaurant’s signature dish is roasted chicken “marinated in a Cuban gravy that delivers a delightful citric and Caribbean spices notes” and served with white rice, black beans, roasted premium potatoes, and sweet plantains.

The restaurant’s Las Vegas partners already operate Cafe Americano at Paris and Caesars Palace and Mercato Della Pescheria at Venetian.

No opening date has been announced since Roeben scored the scoop before any announcement went out.

Dining In & Out

Crossroads Burgers, the fast-food arm of the fine-dining vegan restaurant Crossroads Kitchen at Resorts World, has shuttered. It opened in 2022 in the space formerly occupied for only five months by Marigold. Crossroads Kitchen, owned by celebrity chef Tal Ronnen and backed by Travis Barker (the drummer for Blink-182 and Mr. Kourtney Kardashian), remains open.

New York City chefs and brothers Eric and Bruce Bromberg are opening a new Mediterranean restaurant as part of Red Rock Casinos’ renovation of Green Valley Ranch.

The as-yet-unnamed eatery will serve fish, meat, poultry, and vegetable selections prepared in an open kitchen and will debut alongside the brothers’ third Blue Ribbon Sushi Bar & Grill in the same Henderson, Nev. casino by early 2024. Their first opened along with The Cosmopolitan in 2010, then closed in 2017, re-emerging later that year as Blue Ribbon. Their second Blue Ribbon Sushi remains open at Red Rock Casino Resort.

The Composers Room Showlounge & Restaurant, an old-school Vegas supper club from former Caesars VP of entertainment Damian Costa and his new company, Pompey Entertainment, will debut this summer at the Historic Commercial Center in the space formerly occupied by The Vegas Room and the short-lived Coop’s Cabaret.

Foxtail Coffee Co will replace the Summerlin Starbucks, which stood at 1990 Village Center Drive for 25 years.
