VEGAS DINING NEWS: Bye Guy! Two Japanese Spots to Hit BLVD, Is Giada Cooked?

BLVD will soon feature Tonshou, a new Japanese fine-dining concept, and the second Vegas location of L.A.’s popular Silverlake Ramen.

The big draw at Tonshou will be Bar Centifolia, an outpost of the Tokyo establishment consistently ranked among the world’s most elite bars. Famous for the theatrical craft of owner Yuzo Komai, Centifolia is known for cocktails prepared with ice cubes carved by hand using a Japanese sword.

Silverlake Ramen — ranked among Yelp’s top 100 U.S. ramen shops in 2025 — made its Vegas debut in Chinatown in 2023.

Tonshou is scheduled to open by summer’s end, Silverlake Ramen either later this year or early next.

No Giada Ciao … For Now

While Caesars Entertainment has told Casino.org that Giada will stay after the Cromwell-to-Vanderpump Hotel transition, we still can’t help but wonder how long.

Owner Giada De Laurentiis recently partnered with PENN Entertainment on two projects, suggesting a future independent of Caesars. Her Sorellina opened at Hollywood Casino Joliet last August, and Sorella is expected to open on June 24 along with the Hollywood Casino Aurora.

And the closure of the Cromwell’s only other restaurant, Eatwell, last May pointed to the eventual consolidation of the hotel’s entire culinary identity under the Vanderpump brand, which until this hotel was known only for restaurants.

Guy Fieri’s El Burro Borracho has bid adios. The Mexican restaurant opened at the Rio in March 2016, closed during the pandemic, then struggled after reopening in 2022. The signage is now gone.

Tony Roma’s, which opened at the Fremont downtown in 1994, will close there on May 9. That leaves only 10 locations in the U.S., which once hosted nearly 200. Though this was the only one remaining in Nevada, it was not the most famous. That would be the East Sahara Avenue location — open from 1981-2014 — outside of which mobster Frank “Lefty” Rosenthal’s car was bombed on Oct. 4 , 1982.

    I truly enjoyed dining at Giada De Laurentiis' restaurant at the Cromwell, but after 12 years, if it's getting closer for Giada to end her… I truly enjoyed dining at Giada De Laurentiis' restaurant at the Cromwell, but after 12 years, if it's getting closer for Giada to end her relationship with Caesars Entertainment? There are a plethora of places 'Off Strip' that would be a great dining spot for Locals and Visitors.
