VEGAS DINING NEWS: Paris LV Bar Closed by Health Dept, Bottled Blonde & Wynn’s Pisces Set Openings

The Southern Nevada Health District (SNHD) closed a service bar at Paris Las Vegas on Wednesday for six demerits during a routine inspection. The violations included improper cleaning and sanitizing of equipment and food contact services (3), and inadequately stocked and accessible handwashing sinks.

There were no previous failing grades at what the SNHD labeled “Paris Service Bar 2.” In fact, the venue had received all As, one B, and one “pass” in 22 inspections since 2008.

Other restaurants shuttered by SNHD this week included Vive Cancun at 3513 E. Charleston for a whopping 43 demerits, and the A1 Mobile and Taco Bueno catering companies.

In the restaurant and nightclub business, two years is a lifetime. So we already forgot that we reported on Vegas getting its first Bottled Blonde back in February 2023. The Arizona-based pizzeria and beer garden chain was supposed to open its first Vegas location in the fourth quarter of 2024, but will instead open this summer.

Hopefully, they won’t be as late getting dinner to your table.

The chicken wingerie, bar, and nightclub will be located in the Grand Bazaar Shops next to Ole Red, with whom it will certainly compete for customers. Its 25K square feet of space will be divided over three floors, including an open-air rooftop lounge that features unobstructed views of the Bellagio fountains.

Several Strip-facing buildings were demolished to accommodate the venue’s $50 million construction, but the chain’s new-to-Vegas owner, Evening Entertainment Group, has deep pockets. It owns 25 bars and restaurants across the US, and the Dallas Morning News called Bottled Blonde the “highest-grossing standalone bar in Texas.”

The chain — whose name is a not-so-subtle double entendre referring to blonde ale and bleached blondes — already operates in Dallas, Houston, Ft. Worth, Nashville, and Miami.

Pisces Rising Soon

Pisces Bar & Seafare, the Mediterranean seafood eatery going into the former Lakeside space at Wynn Las Vegas, has an opening date: May 10.

Pisces sees the Wynn return to its practice of creating new concepts in-house. It will be helmed by executive chef Martin Heierling, who has 30 years experience cheffing for restaurant groups including STARR, Urban Purveyor, Noble 33, and former SLS Las Vegas owner Sam Nazarian’s SBE.

Michelin-starred chef Fabbio Trabocchi’s second Fiola Mare was supposed to go into the space last year until The Wynn torpedoed that deal.

Lakeside opened in the former Daniel Boulud Brasserie in 2010, closing in July 2024.
