Miami’s Stubborn Seed to Open at Resorts World

Resorts World will soon have a new restaurant in its stable of culinary offerings: Stubborn Seed.

The cuisine is modern American, brought to Resorts World by chef Jeremy Ford, winner of Bravo’s “Top Chef” season 13. The original Stubborn Seed in Miami is well regarded and earned a Michelin star.

Oh, it’s fancy, all right.

When food and art get it on, this is the result.

Here’s an overview of Stubborn Seed from the news release: “Guided by the vision of Chef Ford, a 2022 James Beard Award semi-finalist, Stubborn Seed delivers an impeccably curated dining experience, highlighted by its signature tasting menu, starting at $135 per person for eight courses and $175 per person for ten courses. Wine pairings and elevated enhancements will also be available. Each visit will be unique and special, as the menu will be based on seasonal availability. An a la carte menu will also be available exclusively at the bar-lounge and the enclosed patio, slated to open this spring.”

To be more specific, Stubborn Seed opens at Resorts World on Feb. 10, 2025. Spring doesn’t even officially start until March 20, but some things in Las Vegas actually open before they’re supposed to, believe it or not.

Here’s a chat with the chef, including a confession his father helped Ford create a fake I.D. to get a restaurant job. Hilarious story until Google says using a fake I.D. can be a felony with a punishment of up to 10 years in prison. We trust the statue of limitations has passed, so the chef can go about his business, phew.




Stubborn Seed will be located at the north end of The District, adjacent to Carversteak (and the escalators coming from the conference center), just off of the Conrad’s main porte-cochere. (Resorts World is made up of several hotel brands. It’s complicated.) The space was never previously occupied, so it’s not replacing anything.

Assuming this is the bread service, as the kids say, LFG. Where “G” stands for “gluten.”

There aren’t any images of the space available yet, so we’ll just pass along the description provided by Stubborn Seed: “Chef Jeremy Ford and Grove Bay have partnered with Celano Design Studio to bring the vibrant art deco spirit rooted in Miami Beach’s exclusive South of Fifth neighborhood to Las Vegas. As guests enter the intimate space, they will be greeted with a signature art deco façade, drawing inspiration from Stubborn Seed’s Miami Beach roots. Lush green foliage will follow guests into the bar-lounge, boasting the signature glass-fronted display kitchen, where Chef Ford and his team will be found. The sleek and sexy bar-lounge will be complete with a view of the expansive, glass-enclosed wine collection, dark and rich leathers and textures, as well as a custom chandelier, providing another nod to the original location. A hand-painted mural will greet guests in the main dining room, combining rugged charm with sophistication, featuring red leather banquettes and a ceiling adorned with tiered, ribbed-glass chandeliers. The exclusive private dining room echoes the signature style of the restaurant and also features views of the custom wine room and intimate seating.”

They said “ribbed.”

We’ll be able to check the place out soon enough, but in the meantime, here’s the bar at the Miami location.

This, but better, because it will be in Las Vegas.

Stubborn Seed did pass along food pics, and like we said, they’re fancy. Sorry, “elevated.”

We are not a foodie, but they had us at whatever this is.

Shockingly, Stubborn Seed will have cocktails. This is sarcasm. It’s hard to tell sometimes.

Here’s what they say about it: “Stubborn Seed Las Vegas will boast a strong beverage program composed of thoughtfully curated cocktails such as the Negroni a La Ford crafted with mezcal, campari, Cocchi Americano and ancho chile liqueur; Kill Dill with gin, Dolin Genepy, cucumber, dill syrup, fresno pepper, egg white and embellished with fresh lime; Fennel Fields Forever with vodka, botanical liqueur, sour apple fennel juice, rosemary syrup and lime juice; Sage Butter Baby combines aged bourbon, Disaronno, sage demerara, egg white and lemon juice.”

We understood some of those words!

That is just ridiculously sexy.

Stubborn Seed joins a line-up of great restaurants we can’t afford at Resorts World, like Aqua, Brezza, Carversteak, Copper Sun, Crossroads, Fuhu, Genting Palace, Wally’s, Viva and Kasu Nori, pretty much any of which is a better restaurant than anything in your hometown unless you live in Rome. All due respect.
