Bazaar Meat Closes, Set to Reopen at Palazzo
After more than a decade, the much-adored Bazaar Meat from Saint Jose Andres, closed at its current shitty location (the Sahara) on July 31, 2025.
Before you have a freak-out, the restaurant opens at Palazzo at the Venetian on Sep. 4, 2025.
We broke the news Bazaar Meat would close, that it would move and where its new location would be (the former Dal Toro Ristorante space). We also beat Sahara’s ass in a frivolous lawsuit for sharing a sourced rumor, so man alive there’s a lot of drama associated with this story. As our fellow youths say, LFG.

It took some time, but Bazaar Meat finally came to its senses and bailed on Sahara and its shit-for-brains owner, Alex Meruelo.
Here’s what A.I. says about Bazaar Meat, saving us at least 10 minutes of research: “Bazaar Meat by Jose Andres is a bold, meat-centric dining experience known for its theatrical presentations and inventive flair. Opened in 2014, the restaurant showcases everything from wood-fired wagyu to cotton candy foie gras, blending primal indulgence with avant-garde technique. It’s consistently ranked among the top steakhouses in Las Vegas, offering a high-end, carnivore’s playground curated by one of the world’s most celebrated chefs.”
Sahara has struggled for years, so Bazaar Meat was fighting an uphill battle, despite all the glowing reviews.
Jose Andres deserved better, and now, he’ll have it.

Here’s more from the official announcement of the opening date: “Executive Chef Frank Medina and his talented culinary team are delighted to reintroduce an innovative menu selection, featuring signature dishes such as the Caviar Cones, Bagels & Lox Cones and the indulgent Wagyu/Black Angus Ribeye. Other must-tries include the Cotton Candy Foie Gras, Bison Buffalo Style Carpaccio, and the Beefsteak Tomato Tartare. Not to mention, iconic cocktails like the Magic Mojito will be returning to elevate each dining experience. As Bazaar Meat approaches opening, the restaurant looks forward to introducing new menu items, including an exciting twist on dessert that promises to surprise and delight.”
Andres, of course, is not only a renowned chef, the aforementioned sainthood is related to his humanitarian efforts around the world. He is the founder of World Central Kitchen, a nonprofit that provides meals in disaster zones around the globe.
Which is ironic, given Sahara is a disaster zone. (We were actually one of the few who loved and raved about the place before Meruelo tanked that relationship forever.)

No official announcement is complete without a quote, so here’s the one from Jose Andres, possibly with accent marks: “Since day one, Bazaar Meat has been one of my favorite restaurants to send friends to—it’s dinner and a show, an incredible celebration of the carnivorous. I can’t wait for you to to see what’s next!”
The Bazaar Meat menu is undeniably weird, but foodies love it, and there’s a lot on the menu for the rest of us normal people.
Chef Jose Andres also has Las Vegas Bazaar Mar at The Shops at Crystals, as well as Jaleo and E (stylized as “é,” pronounced “ay”) by Jose Andres at Cosmo. Oh, and China Poblano at Cosmo, a restaurant that proves even saints aren’t perfect.
We can’t wait to visit Bazaar Meat again, and to summarize, Alex Meruelo is so dumb, he makes John Fisher look smart.
