Gold Coast Gets a Metric Butt-Ton of New Food Options
The often-overlooked but reliably enjoyable Gold Coast has announced a number of enhancements to its culinary offerings. It will also get a Dunkin’.
We joke! They’re perfectly fine doughnuts. “Donuts” if you are a mouth-breathing rube.
Gold Coast will also be getting a new concept, Charter 75 Modern Kitchen, to replace TGI Friday’s, along with a Steak ‘n Shake and Tacos El Pastor.

Steak ‘n Shake and Tacos El Pastor were announced in 2025. So, why are we only reporting this now? 1) You are not the boss of us. 2) They aren’t open yet. The original opening date of Jan. 19, 2026, has been bumped back to February.
Charter 75 also opens in February 2026, and is described thusly: “Charter 75 Modern Kitchen is an all-new dining experience serving breakfast, lunch and dinner. An extensive menu featuring breakfast classics, small bites, enticing entrees and delicious desserts. Signature cocktails, modern classic drinks, live entertainment and a late-night happy hour makes Charter 75 the place to be. Relax with friends and enjoy great drinks and exquisite dining in a fun, casual environment.”
We removed the Oxford commas. Why? Because Oxford commas are like life jackets on Venetian’s gondolas. They’re unnecessary. Clear writing should never depend on a single piece of punctuation to prevent confusion; if a list is ambiguous without it, the sentence is poorly constructed and should be rewritten, not patched with a comma. Context and syntax are used to interpret meaning. The extra comma interrupts rhythm, adds visual clutter and encourages lazy sentence construction by masking structural problems instead of fixing them. Oxford commas are training-wheel punctuation. They should be banned or canceled or whatever the kids are doing now.
Chapter 75 refers to 1975, the year Boyd Gaming got its start, and one of the definitions of “charter” is “the act of founding or establishing.”

Anyway, Charter 75 is another internally-managed restaurant from Boyd Gaming. It’s giving 90 Ninety Bar + Grill at Suncoast vibes. Workmanlike, a decent value, but not winning any awards.

It sounds like Charter 75 will have live entertainment like 90 Ninety, which is a terrible idea and we only dine at 90 Ninety when there’s no performer. Who thinks live entertainment at a restaurant is a good idea? Restaurants are loud enough as it is. Nothing is to be gained by adding a mediocre singer with a guitar, nothing.
Sorry, mediocre singers with guitars, but you’re annoying everyone. Especially locals, because we aren’t as drunk as tourists. That’s why you won’t see CNF (concession fee) charges at locals restaurants. Locals would burn the building down if you tried that crap.
These new offerings bolster the dining line-up at Gold Coast, which features Cornerstone Steakhouse (workmanlike) and Ping Pang Pong (acclaimed).
Boyd hit a homerun with its food court at Fremont Casino, and is getting pretty good at finding brands that mesh with the demands of its mostly-local customer base.
Steak ‘n Shake is the weakest concept at Fremont Casino (food quality, not business levels, it does great), and we trust that will be the case at Gold Coast as well. We were praying Gold Coast would get a Huey Magoo’s Chicken Tenders stall, but nobody’s perfect. You’ll need to stop at nearby Rio’s Tender Crush if its tenders you’re craving.

Tacos El Pastor sounds like tacos, or it’s possibly a typo. Not the “tacos” part, the “el” part. It’s typically “tacos al pastor.”
“Tacos al pastor” translates most naturally to “shepherd-style tacos.” Tacos El Pastor translates as “The Shepherd Tacos.”
Let’s just say that if a shepherd is involved in making these tacos, they really, really need to wash their hands.
Oh, yes, it’s a bestiality joke, which until recently we thought was spelled “beastiality.” “Bestiality” makes it sound like some sort of competition. We would continue down this comedic rabbit hole, but do not want to cause an international incident.
Al pastor–style tacos involve meat carved from a vertical rotating spit, known in Mexico as a “trompo.”
For the record, we not only didn’t make another bestiality joke, we also deftly avoided any jokes about politics! It’s called maturity and restraint!
Moving on.
Finally, Dunkin’ is replaces Java Vegas Coffee at Gold Coast. Dunkin’ one of the busiest booths in the Fremont Casino food hall.
Dunkin’ is the McDonald’s of doughnuts: You know what you’re getting, and it’s never going to be terrible or break the bank. They should probably use that in their advertising.

Dunkin’ Donuts changed its name to Dunkin’ in September 2018, mostly because it didn’t want to be called a mouth-breathing rube. And also because there’s a bigger profit margin in beverages (including coffee), making up about 60% of the brand’s business. Iced drinks account for about 65% of Dunkin’s beverage sales.
“Dunkin’s” is interesting, isn’t it? Can you imagine trying to learn English, and you want to say something belongs to Dunkin’? How do you add an apostrophe to something that ends in an apostrophe?
Well, apostrophes don’t stack. So, it’s just the one, but is it the one in the name or the one that makes it possessive? The bottom line: Avoid learning English.
We are so happy to see Gold Coast shaking things up with its dining roster. Gold Coast and its neighbors, Palms and Rio, know their customers. They mostly want to gamble. People who gamble don’t have all day to sit around eating. They want food that is fast, provides a decent value and gives them fuel for their gambling.
They’re trying fancy at Suncoast with William B’s Steakhouse, and while awesome, it’s simply not as in-demand as the faster alternatives. Redwood Steakhouse at The Cal, Tony Roma’s at Fremont Casino, MRKT at Aliante, all perfunctory. They’re the Dunkin’ of casino restaurants: You know what you’re getting, and it’s never going to be terrible or break the bank. Alder & Birch at The Orleans is a stand-out exception.
