Rather, it’s “espeto corrido” or “continuous service.” While you have a primary server, once you flip over your coaster (green on one side, red on the other), multiple gaucho chefs approach your table bearing gifts.<\/p>\nOr, as our dining companion put it, “I turned over my button and all these men approached me and offered me their meat.”<\/p>\n<figure id=\"attachment_12678\" aria-describedby=\"caption-attachment-12678\" style=\"width: 500px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"lazyload wp-image-12678 size-full\" style=\"border: 1px solid #000000;\" src=\"\/vitalvegas\/dist\/images\/common\/transparent_3x2.gif\" alt=\"Fogo de Chao\" width=\"500\" height=\"750\" data-src=\"https:\/\/www.casino.org\/vitalvegas\/wp-content\/uploads\/2015\/11\/fogo_de_chao10.jpg\"><figcaption id=\"caption-attachment-12678\" class=\"wp-caption-text\">Pace yourself.<\/figcaption><\/figure>\nThe meat served at Fogo de Chao is remarkably good, perfectly seasoned, roasted over an open fire (called “churrasco”) and carved tableside.<\/p>\nThe charming gentlemen delivering your meats aren’t servers, they’re Brazilian-trained gaucho chefs.
