Wynn Las Vegas<\/strong> will host a pop-up from the very first Four Sixes Ranch Steakhouse<\/strong> this September.<\/p>\n

The brand new restaurant is owned by Taylor Sheridan,<\/strong> creator of TV\u2019s \u201cYellowstone,\u201d who also owns Four Sixes Ranch.<\/strong> That\u2019s the working cattle farm in King County, Texas that already supplies the Wynn with some of its beef.<\/p>\n

\u201cThis distinctive, limited-time pop-up puts an emphasis on Western authenticity paired with an unforgettable dinner and cocktail menu,\u201d Brian Gullbrants,<\/strong> COO of Wynn Resorts North America,<\/strong> said in a statement.<\/p>\n

Menu highlights will include a caviar tower served with potato tots, kettle chips, brioche toast, country fried chicken tenders, chive crema, deviled quail eggs, lemon zest, parsley, and bacon bits, and a tableside prime beef tartare.<\/p>\n

Sheridan’s cozy association with the Wynn began in 2022, a year after he purchased his cattle ranch. In December of that year, he held the star-studded premiere<\/a> of his \u201cYellowstone\u201d spinoff, \u201c1923,\u201d at the Strip casino resort.<\/p>\n

Sheridan’s pop-up will be located inside Tableau at Wynn Tower Suites. Reservations will open to the public on August 26. The first service will be Monday, September 16, starting at 5:30 p.m.<\/p>\n

No closing date has been set.<\/p>\n

Sampling Every Strip Buffet<\/h2>\n

Eater Vegas\u2019<\/em> Las Vegas editor, Janna Karel, recently spent nine consecutive days eating at all nine buffets remaining on or near the Las Vegas Strip (at Caesars Palace, Wynn, Bellagio, Luxor, Cosmo, MGM Grand, Palms, Excalibur,<\/strong> and Circus Circus.<\/strong>) Her observations about each can be found here.<\/a><\/p>\n

It was an easier assignment than it would have been in the \u201990s, when an estimated high of 25 buffets operated on or near the Strip. The reason two-thirds have closed since is that they always operated at a loss, yet one that encouraged guests to stay longer and gamble at the casinos that offered them.<\/p>\n

Now that revenue from gambling amounts to only about 25% of casino revenue, down from a peak of 75%, corporations see no justification for shouldering that loss anymore. And that\u2019s also why most of the remaining buffets are no longer cheap.<\/p>\n

The hole left by Holsteins<\/strong> at the Cosmo,<\/strong> which closed in July, will eventually be filled by Mariposa Rosa Mexican Restaurant<\/strong> at an undisclosed date. A taqueria currently operates by that name in Manhattan, though it is not clear whether the new eatery, which will be opened by Holsteins operator Gen3 Hospitality,<\/strong> is related. A building permit application for the transformation lists its cost at $2.9 million.<\/p>\n

Bazaar Mar,<\/strong> set to become the fifth Las Vegas restaurant operated by celebrity chef\u00a0Jos\u00e9 Andr\u00e9s,<\/strong> now has an opening date: Wednesday, Aug. 7. at The Shops at Crystals.<\/strong> According to Eater Vegas,<\/em> \u201cManuel Echeverri,<\/strong> the concept chef and partner for Jos\u00e9 Andr\u00e9s Group,<\/strong> leads the sprawling menu with dishes that are rooted in Spanish flavors with playful elements.\u201d Also on the way from Andres is Zaytinya<\/strong> at Caesars Palace, which was first reported by our own Vital Vegas<\/em> back in June 2021.<\/a><\/p>\n
